Vegetarian Mock Chicken Lemongrass Sambal with Pandan Aromatic Rice

1.Main Items

Potato – peeled and cut into chunks

Vegetarian Mock chicken – 1 packet

Big onion - 1 (sliced)

Tomato – chopped

Lemon grass mashed

Chili paste – 3 to 4 tbsp.

Palm sugar 2 tsp.

1 tbsp. tamarind paste

2 tbsp. thick coconut milk

Screw pine leaves

Lime leaves for garnishing



2. Blend all the below and keep aside

Shallots - 8

Ginger - small pieces

Garlic - 3

Lemongrass - 2

Preparation Method:

  1. Blend all items under number 2 above and keep aside.

  2. Heat oil in a pan.

  3. Fry potato chunks until fully cooked. Keep aside.

  4. Fry the vegetarian mock chicken using the same oil. Fry it till crisp and keep it aside.

  5. Now add 2 knots of screw pine leaves add smashed lemongrass. Fry until the aromatic smell fills the air. 😁

  6. Add the blended paste from Step 1 and fry it for 5 minutes.

  7. Add the sliced onions. Mix well. Fry till the onions become soft.

  8. Now add the chopped tomatoes. Fry till the mixture blended together and tomatoes turn soft and pulpy.

  9. Add salt. Stir further till raw smell of the mixture is gone.

  10. Add chilli paste. I always pre blend chilli paste in advance in my fridge. Ingredients for chilli paste (dry chilli 20, small pcs of ginger, 4 pods of garlic, 1 tsp oil, water)

  11. Fry the chilli mixture about 10 min with medium flame.

  12. Add a cup of water. Mix thoroughly. You may add more if its too thick. Let it simmer. Mix occasionally.

  13. Add 2 tbsp of thick coconut cream. Add a little water.

  14. Add 2 spoon of palm sugar as well. If you prefer to use refine sugar go ahead. Can add salt to taste.

  15. Mix well. Now please add the fried potatoes and vegetarian chicken.

  16. Fry till the gravy thickens. It will take approximately 7 to 8 min.

  17. Garnish with lime leaves.

  18. Turn off heat. Ready to serve.

Here in this video we didn't show how to prepare pandan Aromatic Rice.

It's super easy.

What you need :

A. 2 cups of any rice. I use Basmathi rice here.

B. Pandan extract from 5 screw pine leaves.

C. Fenugreek seeds about 2 tsp

D. Coconut milk 1/2 cup

E. Water 1 1/2 cup

F. Salt to taste.

G. 2 knots of screw pine leaves

Put everything together in a rice cooker and just press cook button. Yeay the rice is ready.
